Produced by roller-milling the whole wheat grain and only sieving off 87.5% of the bran. Retains a substantial proportion of wheat's nutrients although some of the dietary fibre is lost by removing the bran. Made from a hard wheat with a protein level of 14% or higher. Is light brown in colour and gives a slightly heartier texture and flavour to baked goods than Kialla plain flour. Must be refrigerated or frozen to retain freshness. USES: An all purpose flour suitable for most everyday cooking needs.
