Bircher Muesli with Rhubarb


Ingredients

500g (1lb) trimmed rhubarb stalks, cut into 5cm (2in) pieces
2 cups (500ml/16fl oz) unsweetened low-GI apple juice
1 cup (100g/3 1/3oz) wholegrain rolled oats
1 cup (100g/3 1/3oz) rolled wholegrain barley
1/2 cup (90g/3oz) dried apricots, chopped
1/2 cup (35g/1oz) dried apples, chopped
1 1/2 cups (375ml/12fl oz) skim or no-fat milk
1 cup (260g/8 1/3oz) low-fat vanilla yoghurt*
1/3 cup (30g/1oz) flaked almonds

* You can further lower the energy content and GI value of this dish by using diet low-fat yoghurt sweetened with a low-calorie sweetener instead of low-fat yoghurt sweetened with sugar. Compare the carbohydrate and energy content on the label to help identify the no-added sugar varieties.

Method

1 Put the rhubarb and half the apple juice into a pan and simmer until the rhubarb is soft. Cover and refrigerate overnight.
2 Combine the remaining apple juice with the remaining ingredients and refrigerate overnight.
3 Fold the rhubarb through the muesli just before serving. Serves 6
